1 teaspoons lemon juice
2 tablespoons olive oil
2 tablespoons peanuts (or chopped walnuts)
Salt and pepper
- Grate the carrot into a medium bowl.
- Peel the apple, grate it and add to the grated carrot. (You should have roughly equal amounts of grated carrot and apple.)
- Add the lemon juice and toss together.
- Drizzle the olive oil over the salad and mix well.
- Right before serving, toss the peanuts into the salad and season with salt and pepper. You can add some raisins too, if you like.
